POKOTABI / Hakozakicho Sumito
箱崎町すみと
Tucked away in the basement of Nihonbashi-Hakozakicho, Hakozakicho Sumito presents an omakase course highlighting rice vinegar-seasoned sushi rice, freshly boiled kuruma prawn, rich toro rolls, and precise seasonal appetizers.
01 / ABOUT THE PLACE
Stepping down the stairs to the basement level, guests are welcomed by an intimate counter of polished pale wood seating just around 8. Tucked into a quiet corner of Nihonbashi-Hakozakicho, Hakozakicho Sumito is an Edomae sushi destination where finely crafted small plates and nigiri unfold at an unhurried, measured pace.
The appetizers that open the omakase highlight the natural qualities of seasonal ingredients through practiced technique. Dishes such as rich monkfish liver simmered with Japanese sansho pepper, pristine white-flesh sashimi brightened with sudachi citrus and salt, and fragrant grilled seasonal seafood arrive in thoughtful succession, making it easy to linger over sake. The signature toro roll, combining sweet fatty tuna with fragrant toasted nori seaweed, serves as an early standout that heightens anticipation for the sushi to follow.
The shari (vinegared sushi rice) is seasoned firmly with rice vinegar and kept slightly al dente, giving it a crisp acidity that cuts cleanly through richer fish. Each piece of nigiri is carefully tuned for temperature and mouthfeel, whether it is sumi-ika squid offering a brisk bite and lingering sweetness, or kuruma prawn boiled just before serving and left warm without cold-water chilling to retain its sweetness and fragrance. The progression moves effortlessly across Pacific bluefin tuna ranging from fine-grained lean akami to melting otoro, tender simmered conger eel glazed with rich tsume sauce, and sweet, delicate sea urchin.
The drink selection includes curated regional sake labels that complement the delicate nuances of Japanese cuisine, along with beer and wine for an opening toast. Operating primarily for dinner with advance reservations recommended, this quiet counter is well-suited for an anniversary, a personal indulgence, or an evening devoted to appreciating seasonal sushi with a close companion.
